Easy Holiday Brunch Bread Pudding

Bread pudding is one of my all-time favorite dishes. While I consider it a comfort food – especially the kind I order out at a restaurant topped with loads of sugary goodness – I personally don’t keep bread pudding assigned only to the dessert category.

When homemade with ingredients like eggs, milk and fresh or dried fruit and a sprinkle of sugar, bread pudding is a dish I serve up and enjoy with the kids, warmed up or cold straight out of the fridge, for breakfast or as a quick snack.

I’ve found an excellent recipe from AllRecipe.com (authored byEllenMarie) which I use as my bread pudding foundation and I may adjust it ever so slightly depending on my fruit or bread selection on hand.

For the version I made and snapped in these photos, I used a whole grain bread, fresh Italian plums (in place of optional raisins) and honey (in place of granulated sugar). While most of the bread in our house is a whole grain variety, the best type is a stale (this is a must!) white crusty bread like an Italian or French bread.

With only eight ingredients (bread, butter, raisins, eggs, milk, sugar, cinnamon and vanilla extract) you’re sure to have on hand, this recipe is so simple to whip up and pop in the oven for a delicious Christmas morning brunch. Or make it ahead and store in the fridge to re-heat in the morning.
